The 4th of July might be my favorite holiday of the year! I know it’s come and gone, but I’m just sayin’. It’s low key, no presents involved, friends and family are all welcome. It’s just fun, sun, fireworks, water, and delicious BBQ all in one. What’s not to love? Not to mention, we’re celebrating the anniversary of our awesome country.
As a kid, we always celebrated by grilling out with neighbors. And corn on the cob was/is one of my absolute faves. I like it just about anyway. My only request is no olives (yuck!). Another great thing about corn on the cob is it is made on the grill, which means Andy is in charge. Ha! He knows I love my corn on the cob and surprised me with 3 new concoctions! One sweet, one spicy, and one twist on the butter and salt and pepper original!
Here are the ingredients for each kurrrrn (we like to give the word a little more flavor too, ha!) shown above:
Corn #1: Sweet corn: Cinnamon and honey
Corn #2: Spicy corn: Olive oil, red pepper flakes, and parmesan cheese
Corn #3: Twist on the original: Butter and Tony C’s
Andy takes off the first few layers of the husks and then soaks the corn in ice water for 15 minutes or so. This is supposed to keep the kernels moist and the steam the corn inside of the husks.
After the corn’s bath, Andy puts all of the goods on the corn. He uses a cooking brush for the olive oil and butter and just generously sprinkles the condiments onto the corn. Then he wraps each corn lightly in tin foil and puts them on the grill for 15 minutes.
Then, un-warp your masterpieces from the tin foil (wait for them to cool down) and devour! Our fave was the corn #2 with the red pepper flakes and #3 with Tony C’s was a close second! The sweet one was yummy too, but next time Andy said he would switch the honey for brown sugar and a little butter.
