Cinco de Mayo Snacks

We live in Texas and love our Tex-Mex food! We can (and sometimes do) eat tacos for breakfast, lunch, and dinner. I’m serious. Breakfast tacos are a big (delicious) deal in these parts! Because of that we eat a lot of beans, and my fam is loving the 7 new Latin inspired flavors of Bush’s Best beans. I partnered with Bush’s Best to share some cute and healthy kid snack ideas. I thought it would be fun to host a little (early) Cinco de Mayo playdate with friends and test out our snack ideas on the kiddos. We started the playdate by reading one of our favorite books, Dragons Love Tacos!  Becusae, well, tacos are the best start to any Cinco de Mayo celebration, right?!

Cinco de Mayo snack ideas for kids!

After reading Dragons Love Tacos, you get very hungry for all things tacos! So we whipped up a dragon using taco supplies!

Here’s what you need to make Dragon Dip:

  • 1 Avacado
  • 1 Can of Cocinca Latina Friojoles Negores Machacados
  • Baby carrots
  • Butter knife
  • Sharp knife
  • Cutting board
  • Tortila chips

I started by pitting and smashing up the avocado in a bowl, Maxwell loves to help me do this! Then I used a butter knife to spread it on the cutting board. I started with a big oval and then added the dragons head. Just so you know, there is no wrong way to make a dragon! Use the butter knife to shape and smooth your dragon. Then I added beans for the belly and the eye! I cut a few baby carrots up to make ears, spikes, and legs and let the kids put them on the dragon. The wings are just 2 tortilla chips.

Here’s a tiny paw digging into the Dragon dip! Beans and avocado are 2 of Max’s favorite foods, so it was a winner!

Cinco de Mayo inspired snack numero dos was a cactus! Mexico is home to a large desert area so cactus seemed very fitting for a Cinco de Mayo celebration. We also have a lot of cactus here in Austin, so Max and I talk about them often on our daily walks. The cactus was way easier than the dragon. I made a few avocado cactus and let the kids decorate them with beans and bell pepper flowers! Then, they devoured their cactus with tortilla chips (and their fingers).

Here’s what you need to make cactus snacks:

  • 1 Avacado (this will make a few cactus depending on size)
  • 1 Can of Cocinca Latina Friojoles Negores Machacados
  • 1 Can of Cocina Latina Frijoles a la Mexicano
  • Red bell pepper
  • Butter knife
  • Sharp knife
  • Cutting board
  • Tortila chips

Our last bean snack to celebrate Cinco de Mayo was sombreros! I shaped a few bean sombreros on a cutting board, and let the kids decorate them with bell peppers, avocado, cheese, and sour cream. They turned out pretty cute, right?!

Not going to lie, making snacks with kids out of beans is super fun! Expect more bean snacks soon. I’m fairly convinced that I can make anything out of beans. And for the record the 7 new Cocina Latina bean flavors were a huge hit with kids and parents alike. Two year old Maxwell and 10 month old Sloan were big fans of Frijoles a la Mexicana (the spines on the cactus)! Oh and you can get all 7 new flavors at Wal Mart. What bean creation should I make next?!

    We like to do refried beans and shredded cheese on tostadas. A few minutes in the oven and they’re delicious!

    Oh my gosh these are so cute!!! We love to eat the La Cocina beans! We love the charro refried beans in quesadillas!!!
